Chocolate babka bread pudding is a rich, decadent dessert sure to satisfy any sweet tooth. Ready to impress with chunks of sweet dough swirled with chocolate and immersed in a velvety custard, this pudding is quite the showstopper for any celebration.

What is Chocolate Babka?

Chocolate babka is yeasted sweet bread that is braided and typically filled with chocolate. It has an Eastern European origin, Ukraine and Poland specifically, and is a popular Jewish bread (similar to a coffee cake). The dough is braided to allow the filling to swirl evenly throughout the loaf. Other popular fillings include cinnamon, raisin, poppy seed, fruit jam, and sweet cheese. Babka dough is often made using leftover Challah dough and eaten alongside the Sabbath meal on Friday or Saturday.

How to Prepare your Babka for the Chocolate Babka Bread Pudding

While it is hard to imagine leftover babka, it does happen from time to time. Using a chocolate babka that is a few days old is perfect for this recipe. Fresh chocolate babka won’t absorb the milk and egg mixture. If you do find yourself with some leftover babka, you can place it in the freezer in an airtight container. When you want to make the chocolate babka bread pudding, simply pull it from the freezer and let it thaw at room temperature. Cut the babka into cubes about 2.5cm/1 inch and let them sit out uncovered for a few hours.

What you’ll need:

  • Cutting board
  • Bread knife
  • Two large mixing bowl
  • Whisk
  • Measuring cups
  • Measuring Spoons
  • Baking dish

Ingredients:

For the Chocolate Babka Bread Pudding:

  • 1 large day old chocolate babka
  • 6 Whole eggs
  • 3.5 Cups of Whole Milk
  • 1/2 tsp ground cinammon
  • 1 tsp vanilla paste or extract

Notes:

  • If you are using a smaller babka or half a leftover babka you can cut this recipe in half.
  • The amount of milk you are using will vary, depending on how dry the babka is.

For the Glaze:

  • 1 cup confectioners (icing) sugar 
  • 2-3 tbsp. milk or cream
  • 1/2 tsp vanilla extract

Instructions:

For the Chocolate Babka Bread Pudding:

  1. Cut the babka into cubes about 2.5cm/1 inch and let them sit out uncovered for several hours.
  2. Crack the eggs into a large mixing bowl. Add the milk to the eggs and whisk to combine everything then add the vanilla and cinnamon.
  3. Cover the dry babka with the liquid mixture. Toss the babka to ensure that it is coated evenly. Let the mixture stand for two hours OR place it in the fridge overnight.
  4. Preheat the oven to 340°F/171°C.
  5. Put the babka bread pudding mixture into a lightly oiled baking dish. Gently spread the babka mixture into the baking dish but don’t pack it down.
  6. Bake for 50-55 minutes. The babka should still have a little wiggle as the custard will set once it cools.
  7. Let the babka bread pudding cool for 10 minutes before adding the icing.

Note: The babka bread pudding mixture is much better if it is allowed to sit in the fridge overnight.

For the glaze:

  1. Using a whisk or a hand mixer, mix all ingredients together in a bowl.
  2. *Optional: Add another 1-2 tbsp. of milk to achieve a runnier consistency.
  3. Drizzle glaze over cooled loaf.

  • I LOVE this Chocolate Babka Pudding recipe 😋 Hooray for Jewish food! I make this pudding about every 2 weeks during the winter months because it’s the perfect winter dessert. Yummy, yummy 😋 Thank you so much for sharing this great recipe. Oh, I nearly forgot – I add fine sugar to the custard at the beginning of the recipe. I beat the eggs with about 3/4 cup of sugar, and then, when I add the milk, I also add 1/2 cup of cream with the milk. I sometimes add grated chocolate to the pudding before I bake it too. The added chocolate and cream just makes the pudding more rich and delicious 😋 😍
