Cracked Buckwheat sourdough.

13kg walnut raisin dough dump.  This bread will forever remind me of the fine dining restaurants I learned to make it in.  Always served with the cheese course but recently I’ve just been enjoying eating it as is.  What type of cheese would you eat this with 🧀🍞?
Seeded sourdough baguette.  Coating the outside of this baguette with some poppy seeds.  First roll the top of the loaf in a damp towel, then in the seeds of choose.
