One of my favourite baking tools is Challenger Bread Ware. Often I invite my workshops guests to bring their pans from home so they can learn how to bake in what they already have. After testing dozen’s of different pans I have without question found a favourite in Challenger Bread Ware. Made out of this Cast Iron this pan does what baker’s look for in a quality oven and that’s withhold a thermal mass. With many dutch ovens the baker is limited to baking boules but my favourite shape without question is the bâtard an the Challenger allows me to bake two at a time in my home oven.
